The Midwinter Cocktail
This delicious cocktail has a unique surprise - pine-enhanced sugar syrup. It is very easy to prepare, and is perfect for winter gatherings especially if you’re planning a woodland theme. The syrup can be prepared ahead of time, and stored in your fridge in a glass jar (with a lid) for future use.
Recipe
Syrup ingredients:
230ml water
190g sugar
Handful of washed pine sprigs (I use Norfolk Pine)
Cocktail ingredients:
25ml dry Vermouth
Splash of Champagne
To create the syrup, bring the water to a boil then whisk in the sugar. Remove from the heat and continue whisking until the sugar has completely dissolved.
Return the syrup to the heat and add the pine sprigs to the syrup. Let the mixture boil for one minute, then let the pine steep for 30 minutes.
Pour the syrup through a fine mesh strainer into a glass jar.
Once cooled, pour the Vermouth into a glass and add 10ml of the syrup. Fill the glass with Champagne to your desired tasting. Garnish with a sprig of pine.
